Udon or soba at Narita Airport? Choosing by how the noodle carries the dashi
Open the menu and the first question is usually udon or soba. With the same dashi in both, the noodle decides how the dish reads.
At Mendokoro Tsuruhan you can have either, hot or cold.
The surface of the noodle changes how the dashi arrives
Udon is smooth. It carries the broth along with it and you taste it in the swallow, more than at the first bite.
Soba has a finer, slightly rough surface that holds the broth. Its own aroma comes forward, so noodle and dashi sit side by side.
If you want it hot
To take the aroma of the dashi straight, choose something with few toppings. The broth is the same for udon and soba.
- Kitsune (fried tofu) 950 yen
- Aosa seaweed 980 yen
- Ume-ka 1,180 yen
- Ume and egg 1,280 yen
If you want it cold
Cold noodles meet the dashi directly, poured over or dipped into. The outline of the noodle is clearer, so the difference between udon and soba shows more.
- Plain zaru 900 yen
- Ume with grated radish 980 yen
- Tororo grated yam 1,250 yen
- Tempura zaru 1,880 yen
If you still cannot decide
A rough guide: udon on a day when you want to feel full, soba on a day when you want aroma. With tempura, either works well.
Our noodles are Sanuki udon, firm to the bite with a smooth slip down the throat. There is more on our craft page.
