CRAFTSMANSHIP
Dashi, noodles, ingredients.
In every bowl,
the Tsuruhan commitment.
The aroma of dashi that opens the moment it reaches your lips. Silky noodles that stay pleasant all the way down. Preparation that lets each ingredient speak. At Mendokoro Tsuruhan we spare no effort on even the simplest bowl, because we want it to be good enough to eat every day.
To the skies of Narita.
OUR CRAFT
Three commitments
behind every bowl.
Dashi, noodles, ingredients.
By facing each one squarely and crafting it with care, the Tsuruhan bowl is born.
So that an ordinary mealtime becomes a moment of quiet satisfaction.
Our
Our Craft
Dashi defines the bowl.
What Tsuruhan values is the aroma that blooms the moment the broth touches your lips, and a refined flavor that draws out the natural umami of the ingredients.
Dashi brings out the noodles, brings out the toppings, and creates harmony across the whole bowl.
Never overpowering, yet unforgettable.
A taste you’ll crave every day begins with this dashi.
Our
Our Craft
Noodles crafted to bring out the dashi.
The pleasure of noodles slipping smoothly down.
And a wheat flavor that grows with every bite.
Tsuruhan’s noodles are made with their pairing with dashi as the first priority.
Whether served hot or cold, they are designed to show their full appeal.
They are the indispensable foundation of a satisfying bowl.
Our
Our Craft
The character of each ingredient, in every dish.
At Tsuruhan, we give careful attention not only to the dashi and noodles but also to the toppings and side dishes.
Freshly fried tempura, seasonal ingredients, and preparations that highlight Japanese flavors.
By drawing out the natural deliciousness of each ingredient, we elevate every bowl of udon.
So that mealtime feels a little special, we attend to every detail in every dish we serve.
Crisp and light —
Tempura, fried to order.
Selected ingredients fried carefully in a light, fragrant batter. The first bite brings a crisp texture and the savour of the ingredient itself.
Whether eaten alongside udon or enjoyed as tenju over rice, it is prepared to sit in harmony with the flavour of our dashi.
The ingredient, the batter, the frying. We give attention to each in turn, to bring you a plate that makes the meal.
Set meals that give
the occasion its colour.
Our own udon, served with a seasonal dish and rice. A satisfying meal that lets you taste a little of many things.
Casual at lunch. Unhurried at dinner. Being able to choose to suit the day and the occasion is part of what Tsuruhan is.
Japanese flavours combined with care, turning a single meal into a richer stretch of time.
Wrapped in calm,
A refined Japanese space.
Conveniently placed inside Terminal 2 at Narita International Airport, yet filled with a calm air in which to take your time over a meal.
From a solo lunch to a meal with family or friends. A place to catch your breath in the middle of the day, and to spend a comfortable while.
Not only the food, but the space in which it is eaten. That is the Japanese interlude Tsuruhan offers.
